Fun Stuff for Halloween

I have to say time is moving on with bionic speed. I can't believe the days are dashing by. Here in the south the pumpkins are appearing on the porches and the homes are smelling of cinnamon and spice. 

Well, staying with the theme of Halloween, I've gathered some cute recipes you might want to try with the kids. It is so much fun to see the kid's faces when they show off their prize treats.

I'm making my oatmeal, cinnamon & apple cookies for Halloween, as soon as I can find a spare minute. I love the taste of oatmeal & apple when the weather becomes cooler. It reminds me of when I was a child eating a bowl of oatmeal before I went to school on cold mornings.

Pumpkin Rice Krispie Treats Recipe

It wouldn't be the holidays without Rice Krispie treats and this is a fund recipe to do with the kids.

Ingredients
6 Cups Rice Krispie Cereal
3 tbs Butter
10 oz  Marshmallows (approx 1 Bag)
Red & Yellow Food Coloring (to make orange color)
24 Tootsie Rolls
1 Green Fruit Roll-up (you will only  be able to find the blue/green combo)

Melt your butter in a large sauce pan over low heat
Add marshmallows and stir constantly until melted
Remove from heat
Add approx 4 drops of red food coloring & 2 drop yellow food coloring- Add until you have a nice bright orange color
Mix in Rice Krispies
Form small balls into the shape of a pumpkin (Tip: Add Non-Stick Cooking Spray (Pam) or Crisco to your hands before forming your balls)
Cut Tootsie Roll in Half and add a half into each pumpkin while still warm
Cut small leaves from the green portion of your Fruit Roll Up


There ya have it a quick, easy and adorable Pumpkin Rice Krispie Treats recipe. Whip up a batch and everyone who seems them will let you know “how cute” they are.

Popcorn Balls 

I loved popcorn balls when I was a kid and still do. My next door neighbor always made them, the two-handed kind so you looked like a chipmunk or a squirrel eating them.

This is from the Pioneer Woman. I have to admit that I'm not the best when it comes to making popcorn balls. Maybe I'm hoping one of you will make them and I'll get to be a taste tester, hint.

I haven't tried this recipe but it sounds delicious and not to complicated to make. Please let me know what you think.

We do need to add some healthy snacks to our list and these are just too cute and the kids can help you make them. I'd let the kids pick out their favorite fruit and I'd leave some orange slices down inside the little pumpkins.

I wonder about adding some nuts. We here in the south always have to add pecans, especially in the fall, but any kind of nut would work.

You know, you can't go wrong with pretzels and chocolate. The little green M & M's are cute and tasty.

Now this is an easy treat that you and the kids can make for Halloween in no time flat.  Simply insert a pretzel stick into a small Reese’s cup and that’s it.  Everyone will love them!

Easy Pumpkin Muffins With Orange Maple Glaze

These little muffins are so tasty full of pumpkin, spices, nuts, and chocolate chips, a winner every time. You can make the batter and glaze the night before and just bake when you need them. Very good with or without the glaze.

Ingredients
1 cup whole wheat flour
1 cup all purpose flour
½ cup brown sugar
¼ cup granulated sugar
2 Tbsp. maple syrup
1 cup pumpkin puree
3 Tbsps. milk
2 eggs
1 stick butter
1 tsp. baking soda
1 tsp. baking powder
1 ½ tsp. pumpkin pie spice
1 tsp. cinnamon
½ tsp. salt
¼ cup chocolate chips
¼ cup chopped walnuts
1 cup powdered sugar
2-3 Tbsp. milk
1 tsp. orange extract
1 Tbsp. maple syrup maple syrup
Instructions
Preheat oven to 350 degrees
Combine flours, sugars, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt in
In a separate bowl mix pumpkin puree, eggs, butter, and milk until well combined.
Add flour mixture a little at a time until fully incorporated.
Gently fold walnuts and chocolate chips into batter.
Fill mini muffin tins to the top with batter.
Bake for 18-20 minutes until tops are lightly golden brown and springy.
Allow to cool completely before icing.
Icing
Place powdered sugar in a bowl.
Stir in extract and maple syrup.
Add in milk a few teaspoons at a time until it is about the consistency of syrup.
Dip muffin tops into glaze, twist and shake a bit to remove excess.
Spread out to dry.
